Roasted vegetables are one of my favourite things. I love pretty much all forms of vegetables, but roasted… It takes the flavour to a whole new level! It’s such a versatile way to prepare them, and you can add so many different herbs and spices to completely change the end result. It’s so easy to make and takes basically no hands on time. You just season them, put them in the oven, and wait for them to become soft, yet crispy and basically, completely delicious.
Butternut squash has to be my most roasted vegetable. I didn’t know what to do with it for a really long time, and now, I always keep a pot of it roasted in my fridge. This dish is one of my favourite ways to enjoy this vegetable, and has the perfect Christmas twist. Crispy, paprika spiced butternut squash, mixed with sweet, juicy dried cranberries. It may sound strange, but it’s a combination that works so well.
