I love quick and easy recipes. The ones that you can whip up in about 30 minutes for a wholesome and hearty meal that leaves you feeling full up and satisfied. Food that’s full of flavour and can only be described as delicious. These are without a doubt my favourite type of meals. So today I’m sharing one of those very recipes. An absolute favourite in my house, that goes down well every single time. A basic homemade tomato sauce. I know, you can’t really get more basic than that!
I seriously love sweet potatoes; as a soft mash alternative, fried until crispy on the hob or perfectly roasted until deliciously crunchy. I don’t think I’ve ever found a variation that I haven’t completely loved! That’s why on Plant Power Day, I knew I had to celebrate with a delicious bowl of my favourite sweet potato fries.
I know that a lot of people find them boring, but I honestly love big salad bowls. There are so many different things that you can add to them, the variations really are endless! Swap out the protein, change the healthy fat around, or just add a whole heap of different veggies to the bowl. Whatever you do or however you eat them, I find them absolutely delicious. Today, I thought that I’d share one of my favourite and most eaten salad bowls. Easy to put together, delicious and super healthy. Introducing my lentil salad bowl.
Creamy lentils perfectly spiced with just a tiny hint of chilli, chunks of soft sweet potato mixed in with lightly wilted spinach. All piled on top of fluffy white rice with a warm pitta on the side. For me, you can’t get much better than that. Especially on a cold night after a long day of work. I think that my favourite thing about this meal is definitely the simplicity of it all. It’s such an easy recipe to make, and takes hardly any time at all. There’s minimal prep and the whole thing can be done in just under an hour.
With the cold weather coming my diet and food cravings are completely changing. I’m swapping out the cold salads and raw veggies with lightly spiced roasted vegetables and comforting meals. And honestly, what’s better than a scrumptious and hearty homemade shepherd’s pie? Growing up, this was definitely one of my favourite meals, and I would greedily help myself to seconds and even thirds. Full of delicious, rich flavours and smooth and creamy mash potato, it has the best of everything in one bite!
