Crispy on the outside, soft and fluffy on the inside. Lightly spiced with paprika and a sprinkle of salt. It’s finally time to share one of my favourite things ever… Sweet potato fries!
I seriously love sweet potatoes; as a soft mash alternative, fried until crispy on the hob or perfectly roasted until deliciously crunchy. I don’t think I’ve ever found a variation that I haven’t completely loved! That’s why on Plant Power Day, I knew I had to celebrate with a delicious bowl of my favourite sweet potato fries.
I literally cook these fries all the time and have them at least once a week. I love the colour, the taste and just how easy they are to make. The recipe for these honestly couldn’t be simpler; coat in a little oil, season to taste and whack them in the oven for about 45 minutes, turning halfway. Simple as that!
One of the best tips I can give you for this recipe is to place all the chopped sweet potatoes in a bowl and use your hands to coat the potatoes in both the oil and your chosen seasoning. This way, all the strips are coated evenly, leaving you with perfectly crispy fries!
Now all that’s left to do is pile the fries high on your favourite dish and enjoy each perfectly delicious bite!

- 3 medium Sweet Potatoes washed
- 3 tablespoons olive oil
- sprinkle Paprika Powder to taste
- Salt to taste
Ingredients

- Preheat the oven to Fan 180*c
- Cut the sweet potatoes into thin strips and place in a bowl
- Add the olive oil a tablespoon at a time, using your hands to mix it through, making sure all the potatoes are coated
- Sprinkle over the paprika and mix it through
- Evenly spread the potatoes out on a pre-lined baking tray. Add a sprinkle of salt over the top
- Place in the centre of the oven for 45 minutes until golden brown and crispy. Checking and turning halfway through
