These were the result of a little experiment. I really love having some healthy snacks on hand and lately, I’ve been making big batches of bliss balls and snack bites that last all week. They’re great to grab and go when you’re in a rush, and are the perfect little energy boost to keep you going all day.
I’ve been making the same sort of flavours for a while now. My ‘tropical bliss balls’ are refreshing and sweet, and my ‘date truffle energy bites’ are just what I need for rushed mornings, or taste delicious on top of some yogurt. But I wanted to make something completely different. Something that wasn’t full of dates, or packed full of seeds. I wanted something easy to make, filling and of course, completely delicious!
A Little Lighter
With these, I wanted to use some of my favourite flavours, and instead of bulking them out with dates, I wanted to use something a little lighter. To create this base I used a mixture of dried apricots and oats, filling them with fibre and slow release energy, but still leaving them perfectly sweet and satisfying.
These really are one of the easiest things to make. All you do is place all of the ingredients into your food processor and blend until well combined, and a dough like mixture is formed. Then, you just roll them into balls, place in the fridge and you’re good to go.
The Final Touch
You can leave them plain, or coat them in anything you like. After you’ve turned them into balls, simply roll them through your chosen topping, lightly coating the outside of your snacks. This time, I used poppy seeds; crunchy, with a slight earthy taste, they compliment the sweetness perfectly. Although, you can use anything from desiccated coconut to chia seeds, or you can even leave them plain. The choice is completely up to you!
Lightly rolled in poppy seeds, these are sweet, tangy and completely moreish. I love little bite sized snacks which are easy to grab and go… and these little balls are perfect! These are raw, vegan and can be made completely gluten free, woo hoo!
Easy to make with only a few ingredients, they’re the perfect fuel which will last you all day. Lets not forget that they’re also completely delicious!

- 250 grams Dried Apricots
- 200 grams Oats gluten free if required
- Zest of 1/2 Lemon
- 1 tablespoon Maple Syrup
- 2 tablespoons Coconut Oil
- Good pinch Ground Cinnamon
- Poppy Seeds for rolling, optional

- Place all ingredients in a food processor and blend until a dough like consistency is formed. It's fine if there are still a few chunks left in the mixture.
- Shape the mixture into small balls, and gently roll them in poppy seeds until lightly covered
- Place on grease proof paper in an airtight container and put them in the fridge for roughly 30 minutes, to allow them to set
- Store in the fridge until desired. For best results, allow the snacks to warm up slightly before eating
These last roughly 2 weeks in the fridge in an airtight container
