Gingerbread Spiced Granola
Sticky, sweet and perfectly crunchy. This gingerbread spiced granola is the perfect way to welcome in the festive season. It’s warming flavour is my favourite thing to have on winter mornings; served with yogurt, fresh fruit, or just a splash of milk. I love this for breakfast, pudding, or even as a little snack!

  1. Preheat the oven to Fan 170* / 325*F / Gas Mark 3. Line a baking tray with parchment paper and set aside
  2. Place the oats into a bowl, add the chia seeds and spices and mix them all together
  3. Add the coconut oil, maple syrup and date syrup, and stir until fully combined
  4. Place the ingredients onto your pre-lined baking tray, and spread flat on your tray
  5. Place in the oven for roughly 20 minutes, turning halfway and giving it a little stir. If you want it to be super chunky, then try to stir as little as possible
  6. Remove from the oven and leave to cool. Wait for it to completely cool before transferring it into a jar. I like to leave it as long as possible for it to go chunky and crunchy

Leave to sit out for an extra 5 minutes, and try to stir it as little as possible for super chunky granola.
