Cinnamon Spiced Pear Cake
Light, moist and delicately spiced. This pear cake is like a slice of Christmas on a plate. It’s quick and easy to make and the cinnamon sugar crust helps to give it an extra little crunch. This is perfect for that little afternoon treat when you cosy up next to the tree. This is a real winner in my house, and has been made about 3 times this December already!

Cinnamon Crunch Topping
  1. Preheat the oven to Fan 160* / 180*C / 350*F / Gas Mark 4
  2. Grease and line a 1 kg loaf baking tray
  3. Place all the cake ingredients (excluding the pears) into a bowl, and whisk until thoroughly combined
  4. Using a spoon, gently fold in the pears until evenly distributed. Be careful not to overwork the mixture at this stage!
  5. Transfer the mixture to your pre-lined baking tray. In a separate bowl, mix your sugar and cinammon together to create the cinnamon crunch. Sprinkle this on top of your cake mixture, using as much as you like
  6. Place in the centre of the oven for 40 minutes – 1 hour. It’s cooked when the top springs back when gently pressed, or a knife inserted into the centre comes out clean. If the cake’s still not cooked put back in the oven, checking every 2-3 minutes
  7. Remove from the oven and allow it to sit in the tin for 5 minutes, before turning it out on a wire wrack, and leaving it to cool
  8. Once cool, cut a big slice, put the kettle on, and enjoy a festive slice of delicious, warming cake!
Recipe Notes

Make sure that you gently fold in the pears, using a spoon rather than an electric mixer
