What if I told you there was a dessert that looks like ice cream, tastes like ice cream but is a lot healthier than ice cream? I know it sounds too good to be true right?! Let me introduce you to Banana Nice Cream, made entirely out of frozen sliced bananas and a splash of milk. I know whipping up frozen sliced bananas may seem a little strange, but it creates the most delicious, soft, smooth and creamy dessert ever. The result, a big bowl of delicious ‘nice cream’ – and it really does live up to its name!
If you can’t tell, I really do love nice cream! I must eat this about 3 times a week minimum, it is so simple and quick to make. The basic recipe only requires 2 ingredients, a blender and about 5 spare minutes. I love using this as a base to try different flavours. My favourite things to add are a little bit of seed butter or a few sticky dates. Or I like to add a little protein powder when I need a little more in my diet.
Top tip time now: When you’re freezing the bananas, the browner (or riper) the better. This makes the overall flavour of the pudding a little sweeter. Make sure that you cut the ‘nana into small chunks or rings and place them in something like a tied-up sandwich bag in the freezer. I know it sounds like a silly thing to say but when I first tried nice cream, I literally put a whole banana – skin and all – in the freezer. When I was ready to start making the nice cream, I took the banana out and spent forever trying to peel it. In the end the whole thing had to go in the bin as it was completely stuck! Not one of my finest moments I’ll admit.
A simple pudding or even as a light snack or cooling breakfast, just wait for the bananas to thaw a little bit to make blending them easier.

- 2 Bananas frozen
- Spalsh Coconut Milk regular or dairy free alternative can also be used

- Place all ingredients into the blender, and allow to sit for roughly 5 minutes. This will make it easier and quicker to blend together
- Blend all the ingredients together until a smooth, creamy consistency has been reached. Place into a bowl and enjoy straight away! I've garnished mine with date syrup and fresh raspberries but feel free to add your favourite toppings.
If you wish to add in any additional flavours (fruit, spices...), then place them in the bender at the beginning along with the frozen banana.
This recipe doesn't re-freeze well, eat straight away before it melts!
