The perfect way to use up any left over, over ripe bananas. Simple chewy and delicious banana coconut bites. Made with only 5 easy to find ingredients, these are quick and easy to make and taste absolutely delicious!

This has to be one of my simplest recipes to make. All you have to do is add all of the ingredients to a bowl and mix together until everything is well combined. I chose to use mixed spice, but if there is a different spice that you prefer e.g. cinnamon or nutmeg then you could use them instead, or if you prefer you can completely omit this, but I think it adds a nice little bit of flavour. I would also recommend that you use jumbo oats for these bites. It makes the mixture slightly thicker and I found that using smaller, porridge oats made it a little bit more bitty in the texture. The use of desiccated coconut does also give them a bit of texture.

Once everything is well mixed, place a spoonful of the mixture onto a pre lined baking tray. Creating rough circle, patting down gently. Then place in the oven for 25-30 minutes or until golden brown.

These bites are a slightly chewier bake, with a firm outside and slightly softer centre. As these are made with fresh bananas, they’re best stored in the fridge for up to 4 days. However, these do travel well and make the perfect afternoon snack.

These have quickly become one of my favourite snacks. Enjoy them as they are or if you’re feeling a little more indulgent, then drizzle a little melted chocolate on top and let it cool.

Ingredients

  • 2 Over Ripe Bananas, mashed
  • 1/2 Cup Desiccated Coconut
  • 1/2 Cup Jumbo Oats
  • 1 tsp Maple Syrup
  • 1/4 tsp Mixed Spice

Instructions

  • Preheat the oven to 180*C / 160*C Fan / Gas Mark 4
  • Line a baking tray with baking parchment and set aside
  • Add all of the ingredients into a bowl and mix together until combined
  • Place a spoonful of the mixture on to a baking tray creating rough circles, and gently patting down. Repeat this until all of the mixture has been used.
  • Place in the oven for 25 - 30 minutes or until golden brown.
  • Place on a wire rack and allow to cool completely.
  • Enjoy them as they are or if you're feeling a little more indulgent, then drizzle a little melted chocolate on top and let it cool.

Notes

As these are made with fresh bananas, they're best stored in the fridge for up to 4 days. However, these do travel well and make the perfect afternoon snack.
