This is one of my simplest recipes. Mini pavlovas made with pre made store bought meringues. Filled with freshly whipped cream, a sprig of fresh mint and a dusting of icing sugar. This is the simplest type of showstopper; it looks good, tastes good and the best part, was super easy to create and took less than 5 minutes.

These are made with individual, store bought meringue nests. The type with the well in the middle. You can normally buy these in a variety of different sizes and colours, I have seen plain white or pink, but these ones were speckled with gold dust, making them look even more impressive.

The first step here is to whip the cream. To do this, we are going to use whipping cream. You can either do this by using an electric mixer, or by using a small hand whisk, such as the one that you would use to mix egg whites. This is a slightly slower process so if you’re short on time, I would recommend using an electric whisk.

Start by placing the cream into a bowl and using either an electric mixer or hand whisk, whisk everything together until the cream starts to thicken. I always struggle with getting it in that perfect spot, just before it’s over whipped. Whip it too much and too much air escapes causing it to become grainy and flat, not mixing it enough with leave it too runny. You want it to be thick and able to hold its own shape. I’m always a little over cautious and go super slow. I normally whisk on the lowest setting, checking it regularly to get the perfect spot. Once this has been reached, fill the meringue well up with cream. I added enough so that it was slightly overflowing, roughly 1 1/2 teaspoons.

Once the cream is in the meringue, add a small amount of fresh fruit of you choice, I used fresh blueberries ad raspberries and add an optional mint leaf. I found that this helped to add a little touch of colour and perfectly complimented the flavour of the fresh fruit. For the finishing touch, add a little sprinkle of icing sugar and you’re all done! A stunning dessert, made with minimal effort and a truly delicious show stopper. What more could you want?

Ingredients

  • 1 Pack Meringue Nests - I used 4 small meringues in 1 pack
  • 150ml Whipping Cream
  • Fresh Fruit of Choice, I used fresh raspberries and blueberries
  • 4 Small Mint Leaves
  • Icing Sugar, for dusting - Optional

Instructions

  • Remove the meringue nests from the packaging and place aside
  • Place the whipping cream into a bowl and, using an electric mixer or hand whisk, slowly whisk until the cream can hold its own shape
  • Add the freshly whipped cream to the centre or well of the meringue nests. Filling it until it slightly overflows, I added 1 1/2 teaspoons into each meringue
  • Top with a few pieces of fresh fruit, I used raspberries and blueberries, but you can add any fresh fruit of choice here, and add a small leaf for colour, flavour and decoration.
  • Finish it all off with a light dusting of icing sugar.
