Runny Lemon Icing - Cupful of Sprinkles

For a Made with only 2 simple ingredients, this runny lemon icing is sweet, simple and quick to make. I love to add this to the top of my mini blueberry lemon bundt cakes or poured on top of my fresh raspberry cakes.

This sweet lemon icing is made from only 2 simple ingredients: icing sugar and fresh lemon juice. Although this recipe is traditionally made with water, using lemon juice as your liquid gives this the perfect tangy and lemony flavour. To make this place the icing sugar into a small bowl and add in the fresh juice of 1/2 lemon. Mix together with a metal spoon until you have a smooth runny consistency. You can make it thicker by adding some extra icing sugar or runnier by adding extra lemon juice. If you accidentally make it too runny don’t worry, it’s easy to fix. Just add more icing sugar to thicken the mixture. When this is done, it’s ready to be poured on top of the bake.

With this, you can make it as thick or runny as you like, and my ratios really depend o the bake that I’m making. If I want a thicker layer of icing, I might add a little bit more icing sugar, or a little bit less juice. For a thinner consistency, add a little bit less icing sugar, or an extra squeeze of lemon juice.

You can also add a little bit of food colouring to this recipe. I always say that a paste food colouring is better than the runny food colouring versions. In my opinion they create a better colour. They also help to create a better consistency as the liquid food colourings can make your mixture too wet and thin if added.

This type of icing is also delicious with some sprinkles or decorations added on as a finishing touch. If using, add them to the icing when it’s still wet as this will act like glue and keep them on the top of the cake.

Ingredients

  • 50 g Icing Sugar
  • Juice of 1/2 Lemon

Instructions

  • Make the icing by adding the icing sugar to a small bowl.
  • Add the lemon juice and mix until you have a smooth mixture.
  • If it becomes too runny add a little extra icing sugar. If it's too thick add a little extra lemon juice.
  • If using, add a little bit of food colouring and mix until you have your desired colour.
  • Pour on top of your cake and if using, add sprinkles straight away.
