Ginger biscuits made with only 5 ingredients, these are the ultimate quick and easy biscuits. With the perfect ginger kick, these crunchy biscuits are the ultimate warming snack, especially as days gets shorter, nights gets longer and the cold weather sweeps through. These are a super quick and easy biscuit that even the most novice of baker can bake and enjoy!
These biscuits are simple to make and only take a few steps. Start by melting the butter, golden syrup and light soft brown sugar together. Once everything has melted remove from the heat and allow it to cool. It will start to thicken at this point and will continue to thicken as it cools. This is fine and not something to be concerned with at this point. Once cooled, add the flour and ground ginger and mix everything together until a smooth paste is formed. For this recipe, I added a heaped ½ teaspoon of ground ginger. This provides a nice ginger kick, but you can always adjust this, adding more or less to your taste.

Once everything is mixed in and you have a nice smooth paste, take a handful of the dough and roll into a ball. Place it onto the baking try and gently press it down to flattern it. These biscuits don’t really spread too much and will remain the thickness that you make them now. If you prefer a crunchier biscuit, then make them slightly flatter. Or if you prefer a biscuit that’s slightly chewier then leave them a little bit thicker. These normally take around 12 – 15 minutes to bake, but I would always recommend keeping a close eye on them, so you can catch them when they start to start a rich brown colour. Careful that they do not start to burn on the edges.
Once these are cooked remove them from the oven and leave on the baking tray for 1 minute before placing on a wire rack to cool. They may still seem a little soft, but biscuits do harden as they cool. These are delicious when still slightly warm, but when they’ve cooled down and have nice and crunchy texture is when they really shine. A simple and delicious afternoon snack with the perfect ginger kick. I always think that these taste best on the same day as making, but any leftovers can be wrapped in foil and eaten within a few days (if they last that long!).
