Who doesn’t love Easter? It’s the perfect excuse to indulge. A four-day weekend just screams short vacations, lazy mornings and of course delicious food. Late brunches, scrumptious desserts, and dinners worth sharing with as many people as you can rally together. For most people, that includes more than your fair share of chocolate. It comes part and parcel with Easter, and let’s be honest… It wouldn’t be right unless you had at least one choccy egg.
But I always find myself craving fresh spring flavours this time of year. It seems as soon as Easter comes, my body forgets about winter, and is ready to embrace the (slightly) warmer weather, and fresher tastes. I don’t know if it has something to do with the fact that there’s bunnies everywhere, but I’m always craving some juicy carrots! I’d honestly love a bite of carrot cake, (nut free of course). It’s not a taste I’ve ever been mad for, but recently I enjoyed a slice which was seriously tasty, and the love began. But if you’ve read my gluten free diary, then you’ll know that I’m scared to even try gluten free cakes. And I’m not yet brave enough to tackle the baking.
Weird and Wonderful
So carroty and a little bit lighter than all the heavy indulgent food you’ve been gobbling. To me, it can only be one thing. The ultimate and completely tasty way to detox. With a smoothie, of course! I absolutely love smoothies, even more so after I bought my Salter blender. It’s the perfect way to experiment with new flavours and food combinations, and you’ll be surprised at just how many weird and wonderful combinations turn out so well.
I know, I know, adding veggies to smoothies is something which normally makes your toes turn up in disgust. For some reason, it’s all about the fresh fruit, and the poor vegetables are often neglected. But not for long! I’ve found the perfect combination, which not only is immune boosting, but super tasty too. So, if you’re feeling a bit run down, coldy, or just need a boost then this is a must. And it’s a serious winner if you’ve got a sore throat, be warned… It does carry a bit of a kick!
Apple, carrot and ginger. It’s a combination that you would never normally put together, or even think would go. But it’s actually surprisingly nice. The ginger gives it a serious kick, so just be careful on the amount added, you don’t want to splutter your juice out again!
Another key thing is the carrot. Normally in smoothie recipes, carrots are always juiced. I think it’s because it’s makes it a nice smooth consistency. I’ll admit that I’ve made this smoothie before and it’s been really thick from the carrot. I know that it’s not practical to assume that everyone has a juicer, and unless you have a really good blender, you’ll need to give it a little help along the way. That’s where the grater comes in. I know, I know, what I’m suggesting seems incredibly long and like a lot of effort. But seriously, it will take you about 2 minutes to do, and your smoothie will be all the better for it.
It’s really as simple as prepping your food, throwing it in and watching it blend. Not only will this perk you up, but it’s a sure way to kick all the guilt from your maybe slightly over indulgent weekend. And of course, it’s full of them perfect Easter flavours, so you still stay in the spirit of the holiday. Trust me, once you try this, you won’t limit it to just an Easter treat.
Find a new way to get some of your 5 a day, and remember… A little indulgence now and then is nothing but a good thing!
Immune Boosting Carrot Ginger Smoothie Recipe:
Who said Easter was all about the chocolates? The best was to deal with a chocolate hangover is with a detox smoothie. Perfect if you’re just fighting the sniffles too, this will give your immune system a definite boost!
Yields: 1 delicious Smoothie
- 1 Carrot, Peeled and Grated
- 2 Apples, Peeled and Diced
- Roughly 2 cm Fresh Ginger, Peeled – You can add more if you prefer a more intense taste
- 150 ml Fresh Apple Juice
- Place all the ingredients into your blender and blitz until combined.
- Pour into your glass and enjoy some immune boosting, Easter goodness!
